At the beginning of my TED experience, I didn’t even think of baking any bread-like creations. It didn’t even cross my mind. And then when I did want to try my hand at it, I didn’t know what to use in place of butter, margarine or shortening since most non-dairy options include soy. Here’s a substitute that might work for TED moms.
I just heard of “Organic Shortening” from Spectrum Naturals, available from http://www.allergygrocer.com. It is made from “100% mechanically pressed organic palm oil. Contains no palm kernel oil.”
“Bakes and substitutes like conventional shortening, but is free of soy, corn, dairy, and coconut. Made from organic palm oil, which is naturally solid at room temperature without hydrogenation & contains no trans fatty acids.”
Using this shortening, TED moms might be able to make cookies, bread or other baked goods with rice flour and potato starch (using egg and milk substitutes).
