So this is my third time down the TED road. My babies haven’t tolerated potato or turkey, so I’ve had to get creative! Some things I have learned:
1) Purchase meat from a grass-fed farm, wholesale. We have bought 3 lambs in the past 3.5 months. We saved a ton of money per pound buying from the farmer!
2) Sweet treat: Since sugar is a big “no” for us, I’ve learned to sweeten with pears.
-Pear cookies: Preheat oven to 375. Peel, core, and chop 3-4 very ripe pears. Mash with a potato masher. Add a pinch of salt and 1/3 cup extra light olive oil. Stir until emulsified. You can add a tablespoon or two of brown rice syrup at this stage if your LO can tolerate it. Then add in brown rice flour until a cookie batter consistency (I have found this is usually about 1.5-2 cups. Line a baking sheet with parchment paper, and drop batter by tablespoonfuls. Press down slightly with a fork. Bake about 20 minutes, or until they begin to brown on the edges.
-I have found I like Bob’s Red Mill Creamy Rice Cereal better than Rice and Shine. I like to prepare it the day before with rice milk and then refrigerate overnight. It’s great for breakfast or a snack. Adding in mashed pears makes this even better
3) Lamb:
-Make lamb stock by covering any leftover bones with water and simmering for 4-6 hours. Refrigerate the stock. The fat that rises can be use to grill zucchini slices on the stove. The stock can be used to make soups or stew.
-Lamb vermicelli: I really enjoying using lamb broth, then adding in rice vermicelli noodles (found in the asian section of your store) and thin slices of zucchini.
-Lamb stew: Coat lamb stew cubes in brown rice flour. Add a tablespoon of oil to a hot frying pan, and brown cubes in batches. Season with sea salt. Remove lamb cubes and put in crock pot. Deglaze pan with 2 cups water, scraping off any brown pieces from the bottom of the pan. Pour over lamb pieces in crock pot. Cover and cook on low 3-4 hours or until meat is tender.
-Putting lamb and zucchini on the grill gives it so much more flavor!
