Ari & John(For all of you on a special diet or w/ toddlers on a special diet- you can use rice milk, or another ‘milk’ and egg replacer!)
This
recipe is from my Grandma (Naomi Kaplan, 1902-1985). She was of
Germanic-Jewish descent & her family was in the USA ‘early’ (she was born in
the US, as was her mother)…LATKES
1/4 cup milk
2
eggs1 Tablespoon diced onion
1 teaspoon salt
1 & 1/2 cup cubed
raw potato
1/4 cup flour
1/4 teaspoon baking
powder
~~~~~~~~~~~~~~~~~~~~~~~~Put all ingredients in blender –
Grandma Heller said you had to put them in the above order- pulse 5 seconds or
so.
Batter is uneven- liquidy, etc.
Fry in HOT oil (my mom says
Wesson)

December 12, 2009 at 9:38 pm #65083AnonymousInactiveI can get the egg replacer at my local Kroger grocery store in the “health/organic/specialty food” section. I use it for everything except cakes. if it calls for more than 2 eggs I usually just find another alternative.

UNSALTED margarine sticks (for baking)- they used to be both dairy/milk free (not sure about soy, but I think erintx posted that soy oil usually is ok?).
Mazola’s unsalted sticks are MSP-free too (check!!). Blue Bonnet makes (at least used to make) one
variety that is ok (check!!!). -
