Teff & Buckwheat Pancakes
Ingredients:
½ cup teff flour
¼ cup light buckwheat flour
½ teaspoon baking soda
½ teaspoon cream of tartar
⅛ teaspoon salt
¾ teaspoon powdered egg replacer
¼ teaspoon guar gum
1 tablespoon mashed banana / banana sauce
1 ½ tablespoons vegetable oil
1 ½ tablespoons agave nectar (or honey, or maple syrup, if preferred)
¾ cup milk substitute (warmed)
Directions:
Combine the dry ingredients (first 7 ingredients) thoroughly.
Add the mashed banana, oil, agave nectar and warm milk substitute and stir until combined.
Sometimes I mix in some Enjoy Life chocolate chips or blueberries right at the end.
Cook on a hot, lightly greased griddle.
Makes 5-6 pancakes.
Comments:
the banana is being used as a binder … you could use squash, pumpkin, or a thick fruit sauce easily …
you can replace oil/butter with coconut yogurt to
make gfcf foods much more moist and
more like “wheat” products …
and, adding in a t. of vinegar
(lemon) juice gives a buttermilk-type taste, too …
