These are food ideas and brands for anyone trying dairy/soy/gluten free diet. There is no beef here, as we couldn’t do beef. But you can substitute any kind of meat or sub tofu sometimes if you can have soy. When I say soy free, we do consume soy lecithin, so that is found in some of the following items, but that’s it for the soy. Everything else, even if it doesn’t say, is gluten free and dairy and soy free. Anything calling for milk, we use Rice Dream Original Enriched rice milk. Anything calling for butter, we use olive oil or other oils, canola or grape seed. I’m sure there are many better cooks out there, but this is what I’ve come up with for daily life on this diet in our house. We have all varieties of fruits and veggies– which aren’t mentioned as much in this list.I’m sure I’m leaving things out and I have a great potato salad recipe and a south asian recipe that I’ll post later.
Breakfast ideas:
Van’s or Trader Joe’s Gluten Free waffles (dairy and soy free, too) with pure maple syrup if you like
Cereal: Enviro Kids: Gorilla Munch, Panda Puffs;
Cereal: Perky’s Nutty Rice (great new find for us!)
Smoothie: Banana, Rice milk, Sambazon Acai smoothie packs– blend and enjoy! You can do any combo you like, with raspberries, blueberries, strawberries, blackberries, etc.
Pancakes: Arrowhead Mills Gluten Free Pancake Mix, we do it with banana slices inside and sometimes have raspberry compote on top.
Chicken or pork sausage cooked in olive oil
Scrambled/fried eggs with chopped spinach, eggs over easy with basil, salt and pepper on top (or other herbs); hard boiled eggs
Bacon: turkey or pork
Lunch:
turkey and avacado on gluten free bread, or between two waffles
hummus and cucumber, carrots, celery
spinach salad with sauteed chicken, strawberries, sunflower seeds, cucumber slices, and oil and apple cider vinegar dressing or raspberry vineagrette dressing
sweet potato or regular potato fries or wedges: slice potatoes, toss with olive oil and salt/pepper, cook at 400 for 30-40 minutes
Dinner:
Chicken cooked in chicken broth with Anne’s rice and a veggie
Chicken sauteed in Trader joe’s Cuban Mojito Simmer Sauce with Anne’s rice and veggies
Chicken sauteed in Trader Joe’s Thai Green Curry sauce with Anne’s rice and veggies
Fried Chicken: diced, dipped in egg and coated in gluten free baking flour, then sauteed in olive oil until golden brown
Coconut Curry Chicken: Chicken coated with Curry spice, cumin and coriander– set for 15 minutes, then simmered in coconut milk until chicken is cooked
Rice pasta with bacon, chicken sausage chunks, peas, green beans and fresh avacado chunks
Anne’s Rice: Brown rice cooked in 1/2 water 1/2 veggie broth (or chicken broth) with three tbsp of grapeseed oil. Yummy!
Vegetarian: Anne’s rice with black beans, steamed carrots and trader joe’s cuban mojito simmer sauce
Dessert:
Namaste cookie base with choc chips–by far the BEST dairy/soy/gluten free cookies we’ve ever had, my dh loved them too-
Good Karma Very Vanilla rice cream
Good Karma choc covered rice cream bars
Trader joe’s chocolate covered bananas
Celestial Seasonings Tea Dreams Vanilla Hazelnut Fudge rice cream
Belizza Acai Sorbet (banana or mango)– this is good with cold or fresh berries on top as well.
ARrowhead Mills Gluten Free Choc Brownie Mix–
These have become the famous “Birthday Brownies” in our house– they are taken to all birthday parties and Lucas looks forward to eating them since he can’t have birthday cake. He gets these on special occasions when I know we’ll be having dessert, especially at someone else’s house or event. I make them ahead and keep a bunch frozen in the freezer in separate ziploc bags.
Dressings/condiments: Trader Joe’s mayonaise, mustard
olive oil and apple cider vinegar mix equal parts or to taste
some raspberry vineagrettes (I can’t remember the brand, maybe Brianna’s?)
Snacks:
Rice Thin rice crackers– LOVE THEM!
Pomegranite–fun for kids especially
bananas, lots of other fruits and veggies
apples with peanut butter
cucumbers
pickles
hummus with veggies or crackers
guacamole: fresh avadaco, little bit of lime juice, salt
Kettle Chips: salt and pepper
Trader Joe’s Hawaiian Salt and Vinegar chips
Nuts and other nut butters: walnuts, almonds, etc.
Special creations:
Pumpkin Chocolate Chip muffins: Gluten free flour all purpose (I think Bob’s Red Mill) flour, followed the recipe on teh back for banana bread but used a can or organic pumpkin and added mini choc chips that were dairy/soy/glu free. Lucas loves them! I keep some frozen in the freezer so I can use them when I need to
