Cup cakes
2/3 cup coconut oil
3/4 cup sugar
1 1/2 cups flour
3 eggs
1 tsp vanilla extract (I make my own so it’s corn free)
Preheat oven to 350. Grease (I use safe olive oil) a muffin pan. In a large bowl mix oil, and sugar with mixer about 5 mins. Stir in the eggs one at a time, blending well after each one. Stir in the flour and vanilla just until well mixed. Spoon batter into the muffin pan and bake approx 15-18 mins.
They aren’t the most fluffy cupcakes I’ve ever eaten but my 2 year old LOVES them lol.
