Someone on another forum shared these TED dessert recipes and they looked so nummy I thought I’d pass them on! 🙂 I tried to add them to the reflux.org message board, but I couldn’t log on to do so (forgot my username and password since I signed up ages ago!). So maybe someone else can cut and paste them there too. I can’t wait to try them as I have a big sweet tooth!! I made pear crisp tonight and it was delicious (made up my own recipe).Rice crispy bars
1 box plain brown rice crispies (such as Erewhon)
1 1/2 cups brown rice syrup
3 TBSP. Arrowroot (you could try eliminating this, it’s a thickener, but rice syrup is plenty thick OR you could try using potato starch)Directions:
Bring brown rice syrup and arrowroot to a simmer over medium heat stirring constantly.
When heated for approximately 10-15 minutes, add the box of brown rice crispy cereal and stir.
Immediately place in greased (using safe margarine or oil) 9 x 11 pan, and put in fridge.
Cut when cool.Hilary’s Sweet Potato Cookies
approx 1 cup boiled then mashed sweet potatoes
1 cup brown rice flour
1 Tbs potato starch
1/4 cup oil
1/4 cup rice syrup (could use any sweetener that is safe)
1 tsp saltMix all together, should be sort of thick, not runny at all.
Make blobs on a cookie sheet, flatten with fork, so they look sort of like peanut butter cookies. Bake at 375 or so, about 20 min or until just starting to turn golden on the edges.

Mix together:
1/4 cup oil
1/2 cup sugar
Then add
1/2 tsp baking soda (I was told it shouldn’t be a problem on a TED, and it hasn’t been for us)
1/2 tsp salt
1 to 1 1/4 cups rice flourblend all together, and ideally should be about the constance of sugar cookie dough. Usually though, I find it’s too “crumbly”, won’t hold together well, so I add about 1/8-1/4 cup of water.
Then you have to play around with the best way to make the “cookies”. making drop cookies didn’t work very well, they didn’t melt much. so far, for me, the best way has been to make about 1″ balls, then flatten them with my hands.
Bake at 350 for 10-11 minutes. remove to a cooling rack or plate right away, as they cool they get very crumbly.
