So, I have had to keep rice from my diet, and have been really wanting a breakfast cereal for some time. I decided to trial millet, and was really surprised at how tasty it was as a cereal! The grain itself has almost a bit of honey flavor to it.
Creamy Cereal:
1 cup Hulled Millet (I used Arrowhead Mills)
5 cups water
Organic Sugar (optional)
Place the millet and water together in a large sauce pan, and bring to a boil. Reduce the heat to low, and let simmer for about 35 minutes, stirring often. You can add water as it cooks if you want a creamier texture.
Serve warm sprinkled with whatever your diet allows: organic sugar, dried cranberries, rice milk, go crazy!
(I make up a few batches at a time, they keep just fine for a few days in the fridge.)
